These fritters are easy to make, crunchy, but still soft, cheesy and delicious and everyone love them 😊
3 zucchini, grated
3 spring onions, chopped
3 garlic cloves, finely chopped or grated
1 egg, lightly beaten
100 g feta, crumbled
50 g flour
Salt & pepper, to taste
*2 tbsp vegetable oil, for frying
In a bowl, grate the zucchini, add salt, toss to combine and let sit for 15 minutes.
After this time, using your hands, squeeze out as much liquid as possible.
In a bowl, mix zucchini, onions, garlic, cheese, flour and egg. Season and heat the oil in a pan.
Using an ice-cream scoop form the fritters and place them in the pan.
Cook until golden brown and crispy, about 2-3 minutes on each side.
