Zucchini cupcakes

Goodies’ time is here 😊

Today’s recipe is about chocolate and zucchini, combined in moist, chocolatey and delicious cupcakes. ✨

250 g zucchini, grated

125 g all purpose flour

100 g sugar

1 egg

45 ml coconut oil

1 tsp baking powder

1 tsp cinnamon

1 tsp vanilla

½ tsp salt

50 g chocolate, chopped

White chocolate ganache

300 g white chocolate, chopped

150 ml whipped cream

2 tsp blueberry powder

Preheat the oven to 180 C and prepare a muffin tray.

In a large bowl sift the flour, baking powder, salt and cinnamon.

In another bowl mix the egg, oil, sugar and vanilla until well combined.

Pour this mixture over the flour and mix until almost combined. Stir in the zucchini and chocolate.

Using a spoon, divide the batter between muffin cups and bake for 20 -30 minutes or when a toothpick Inserted into the center comes out clean. Let it cool completely.

Meanwhile, bring the cream to a boil and add the chopped chocolate and blueberry powder. Let it sit for 3-5 minutes and then, mix the chocolate and cream until smooth.

Chill for 1-2 hours and whip until fluffy – about 1 minute. Using a piping bag decorate the cupcakes as you like.
