Wild garlic soup

I love wild garlic, you already know that 🙂
Today’s recipe is a beautiful, velvety soup made, of course, with wild garlic.

1 medium potato, roughly chopped
1 medium onion, roughly chopped
1 small carrot, roughly chopped
2 bunches of wild garlic
20 g butter
Salt & pepper, to taste

Bring a pan with 1 l of water to boil. Add the potato and carrot and cook until tender, about 15 minutes. Sauté the onion in butter then add it to potato and carrot soup.
Add the wild garlic leaves and simmer everything for another 5 – 7 minutes.

Blend everything with a stick blender and season to taste.

Enjoy!
