1 cauliflower
2 tsp smoked paprika
2 tsp turmeric
2 tsp garlic powder
2 tsp sumac
1 tbsp EVOO
Salt & pepper, to taste
Hummus
Leek sprouts
Sorrel leaves or lemon juice
Preheat the oven to 220°C and prepare a baking tray with parchment paper.
Combine the oil with powders (garlic, turmeric, paprika, sumac), season and spread it on the cauliflower.
Put the cauliflower in the tray and roast for 40 – 50 mins or until golden and tender.
Divide the hummus between plates, add the cauliflower steak, sprouts, leaves and drizzle with extra oil.
