Warm purple potato salad

When you wanna eat some comfort food, but a little bit different, try this warm salad. Super easy to make, this salad is good looking and surprisingly delicious. ✨

 

500 g purple potatoes, skin on, cleaned

200 g broccoli, chopped

1 small red onion, chopped

4 spring onions, chopped

2 eggs, hard boiled, chopped

½ bunch of parsley/dill, finely chopped

2 tsp mustard

2 tsp lemon juice

2 tbsp EVOO

Salt & pepper, to taste

Fill a pan with water, add the potatoes and boil until tender, about 20 minutes. Drain, let them sit for 10 minutes, then peel them off and cut in pieces.

Bring a salted pan of water to boil, add the broccoli and cook for 3 minutes, then drain and run them under cold water.

In a small bowl, mix the mustard with oil, then add the lemon juice and season.

In a large bowl, add the potatoes, broccoli, onions, eggs and parsley, pour the dressing over and mix to combine. Divide between plates and serve.
