Meatless Monday is here 😊

Today I was craving for a burger. And avocado. And earthy turmeric taste. I combined all of these in a delicious bite. ✨🍔

200 g chickpeas, rinsed and drained

200 g red beans, rinsed and drained

4 spring onions, roughly chopped

4 garlic cloves, chopped

½ a bunch parsley, chopped

1 tsp smoked paprika

1 tsp chili flakes

½ tsp cumin

1 tbsp all purpose flour

Salt & pepper, to taste

Turmeric burger buns

1 tomato, sliced

1 red onion, sliced

Avocado mousse

Cream cheese

Radish sprouts or your fav microgreens

In a food processor add the chickpeas, red beans, spring onions, garlic, parsley and pulse 2-3 times.

Add the flour, paprika, chili, cumin and season. Pulse until combined, but not too smooth.

Divide and shape 2 veggie burger and chill for 30 minutes in the fridge.

Heat a non stick pan, add the burgers and cook for 5-7 minutes or until golden.

Build your burger as you like. Mine was: base bun, avocado mousse, burger, avocado mousse, vegetables and microgreens, cream cheese & bun tops.
