Vegan – Zucchini & spinach soup

Meatless Monday is here 😊 Today’s recipe is a summerish, easy one, just perfect to be enjoyed cold or warm ✨

 

3 zucchini, roughly chopped

1 onion, chopped

3 garlic cloves, chopped

100 g spinach

1 spring onion, finely chopped

750 ml water/vegetable stock

1 tbsp vegetable oil

Salt & pepper, to taste

Heat the oil in a pot, add and cook onion for 2 minutes, than add the garlic and zucchini and cook for 2 minutes more.

Add the water, bring to boil and simmer for 10 minutes. Take off the heat, add the spinach, stir well and set aside for 2 minutes.

Use a stick blender and blend until smooth, then add the spring onion and serve.

Enjoy!
