Vegan – Wild garlic soup

One of the easiest and fragrant soup is this seasonal dish. The wild garlic is available only in spring time so, give it a try, and you will be impressed 😊

 

200 g wild garlic

½ leek, chopped

50 g celery, chopped

2 green onions, chopped

100 g peas, frozen

500 ml water or vegetable stock

50 ml vegan cream

1 tbsp EVOO

Salt & pepper, to taste

Heat the oil in a pan, add the leeks and celery and cook gently for 5 minutes or until soft, then add the peas, green onion and wild garlic and cook for 1 minute. Pour in the water or vegetable stock and bring to the boil.

Continue cooking for 5-7 minutes. Use a stick blender to blend until smooth. Season and add the cream and serve with croutons.
