Vegan veggie balls tacos

For this taco Tuesday I’ve chosen to prepare a vegan version with soft, delicious veggie balls 🌮✨

 

200 g veggie balls

1/4 red cabbage, shredded

1 large avocado, cut in cubes

100 g tomatoes, cut in cubes

1 red bell pepper, chopped

2 limes

Microgreens

3 tbsp vegan yogurt

1 tsp Sriracha

2 tbsp bean puree

4 tortillas

Salt & pepper, to taste

Slice the cabbage and mix it with 1 tbsp lime juice and 1 tsp salt and set aside.

For the sauce, mix the yogurt with Sriracha and season.

Warm the tortillas, add the bean puree, top with cabbage, veggie balls, sauce, tomato, avocado, pepper and microgreens.

Serve with lime wedges.
