Vegan – simplest bean stew

Sometimes, the simplest ingredients make a very delicious meal ✨

 

2 cans bean, drained and rinsed

1 medium onion, chopped

1 carrot, chopped

4 garlic cloves, chopped

½ chili, chopped

25 g tomato paste

300 ml water

1 tsp smoked paprika

1/2 bunch parsley, chopped

1/2 bunch dill, chopped

2 tbsp vegetable oil

Salt & pepper, to taste

Salad leaves

1 red onion, pickled

Heat the oil in a large pan, add the onion and carrot and cook until softened. Add the garlic and chili and cook until fragrant, then add tomato puree and stir until well combined.

Add beans, smoked paprika and water and simmer for 10-15 minutes.

Remove from the heat, season and sprinkle with parsley and dill. Serve with your favorite salad.
