Thursday is here, so bowl day is back 😊
Today it is about healthy quinoa and a classic dressing. Together with a lot of delicious veggies, of course ✨
150 g quinoa
1 zucchini, sliced
1 red onion, sliced
1 avocado, cubed
1 carrot, ribbons
200 g edamame
200 g broccoli, florets
100 g asparagus, chopped
150 g baby kale salad
Leek shoots
1 lemon, juice
1 tsp chili flakes
1 tsp sesame seeds
3 tbsp EVOO
Salt & pepper, to taste
Cook quinoa as per your package instructions (mine was ready in 12 minutes).
Heat 2 tbsp of oil in a pan and cook the zucchini, asparagus and broccoli for 4-5 minutes. Season and set aside.
Bring a pot of water to boil, add edamame and cook for 1 minutes. Drain and refresh under cold water.
Divide the quinoa between bowls, add zucchini, broccoli, asparagus and edamame, then the fresh veggies. Season, sprinkle with chili flakes and sesame seeds, drizzle with remaining oil and lemon juice and serve.
