Vegan – Pilau rice

Today’s recipe is a classic one in our Romanian culture, especially before major Christian events (Easter, Christmas). It is a very simple rice dish, made with almost every vegetable you have in your pantry. It is comforting, it is nutritious and it is delicious. ✨

 

150 g rice

1 medium red onion, chopped

1 medium carrot, chopped

1 bell pepper, chopped

1 small zucchini, chopped

100 g cherry tomatoes, chopped

5 garlic cloves, chopped

450 ml water/vegetable stock

1 bunch parsley, chopped

1 tsp chili flakes

2 tbsp EVOO

Salt & pepper, to taste

Heat the oil in a large pan (or a pot), add the onion, carrot and pepper and cook until almost soft, about 5-6 minutes.

Continue with zucchini and tomatoes and cook for 5 minutes more. Add the garlic, cook for 45 seconds. Add the rice and cook until translucent, about 2 minutes.

Pour the water/stock, cover with a lid and cook for 15 minutes. Season, add the chili flakes and parsley, cover with a lid and let sit for another 10 minutes, then serve.
