Vegan – Peanut tofu with black rice

Meatless Monday is here 😊

Today’s recipe is a delicious dish, super easy to prepare, with just a few ingredients ✨

 

300 g firm tofu, cut in cubes

3 tbsp unsalted peanut butter

3 tbsp soy sauce

3 tsp rice vinegar

3 tsp sesame oil

3 garlic cloves, grated

1 tbsp fresh ginger, grated

Water

70 g black rice

420 ml water

Pinch of salt

2 green onions, finely chopped

Sesame seeds

In a pot, add cold water and rice, bring to a boil and let simmer uncovered until tender about 20 minutes. Season, cover for 10 minutes. Drain and fluff with a fork.

In a bowl add all peanut sauce ingredients and mix very well. Add as much water as you need, I’ve added 4 tbsp.

Heat a nonstick pan, add the tofu and cook on each side until beautiful golden and crisp. Add the peanut sauce, toss to coat and cook 1 minute more.

Divide the rice between plates, add tofu and green onions, sprinkle with sesame seeds and serve.
