Directions
Today’s recipe is a not-so-popular one, but I will keep preparing it as often as I can (find the nettles). This seasonal plant is a nature’s wonder, give it a try, it will surprise you. ✨
500 g nettles
1 medium onion, chopped
3 garlic cloves, finely chopped
1 tbsp flour
1 tbsp vegetable oil
Salt & pepper, to taste
To serve
Polenta
Aromatic oil
Nutritional yeast
*Using gloves, wash the nettles well in cold water.
Bring to boil a large pot of salted water, add the nettles and let them boil for 3-5 minutes. Drain them, but keep 500 ml of the water and blend them until puree.
Heat the oil in a pan, add the chopped onion and cook for 3-5 minutes, then add the garlic and cook until fragrant, about 45 seconds.
Add the flour and stir well. Add the water from the nettles and mix until it turns into a thick sauce.
Add the nettle puree, mix well and season with salt and pepper.
Serve with creamy polenta and nutritional yeast.
