For yesterday’s recipe I’ve cleaned and blanched some extra nettles, so today I’ve prepared a new old recipe, a healthy soup, not so common these days, but certainly a delicious one.

Back in the past, these plants were popular in my country, now I am rediscovering them and I am pretty happy with these recipes and its tastes. ✨

 

1 onion, chopped

1 carrot, chopped

4 garlic cloves, finely chopped

30 g rice

4 spring onions, chopped

200 g nettles, blanched, chopped

1 bunch orach (mountain spinach), chopped

1 bunch parsley, chopped

700 ml water from blanched nettles

½ lemon, juice

1 tbsp EVOO

Salt & pepper, to taste

Heat the oil in a pot, add the onion and carrots and cook for 4-5 minutes, then add the garlic and cook until fragrant.

Add the rice and stir for 45 second more, then add the water from blanched nettles, cover and simmer for 15 minutes.

Add the nettles, orach, spring onions and continue cooking for 5 minutes more.

Take off the heat, season, add lemon juice and parsley and serve.

Enjoy!
