Bowl’s day is here 😊 Today I chose to build my bowl starting with some delicious Kalamata olives. It is a fresh, crunchy and healthy option for anyone looking for a light meal. ✨
1 can chickpeas, drained and rinsed
1 red onion, chopped
4 garlic cloves, chopped
1 chili, chopped
1 tsp smoked paprika
1 tbsp EVOO
Salt & pepper, to taste
200 g bulgur, cooked
1 cucumber, sliced
150 g cherry tomatoes, halved
½ red onion, sliced
50 g Kalamata olives
2 tbsp hummus
1 lemon, juice
EVOO
Heat the oil in a pan, cook the onion for 2 minutes, add the chili and garlic and continue cooking until fragrant, then add the chickpeas, paprika and cook for 5-7 minutes more. Season and set aside.
Divide the bulgur between plates, add the veggies, hummus, olives and chickpeas, drizzle with lemon juice and extra oil and serve.
