Vegan – chocolate energy bites

Goodies’ time here 😊

Today I wanted something super simple to make, without added sugar, fudgy and reach✨

 

125 g medjool dates, pitted

125 g dried plum, pitted

2 tbsp peanut butter

2 tbsp cocoa powder

50 g peanuts, unsalted

1 pinch of salt

To coat

100 g dark chocolate

1 tsp vegetable oil

In a food processor, add all the ingredients and pulse until well blended, it should stick together when pressed.

Using your hands form balls and chill them for 20 minutes.

Melt the chocolate and oil in microwave, in 30 sec intervals and stir between each until fully melted.

Dip the balls into the melted chocolate, then place on parchment paper and chill until the chocolate is fully set.

Enjoy!
