Teriyaki King Oyster Mushroom

For this meatless Monday, I’ve chosen a delicious veggie to indulge myself: king oyster mushroom. Rapidly prepared, this meal is a feast for anyone ✨


300 g King Oyster mushrooms

3 green onions, finely chopped

1 chili, finely chopped

200 g cooked rice (prepared as per your package)


100 ml soy sauce

2 garlic clove, grated

1 tsp ginger, grated

1 tbsp rice wine vinegar

2 tbsp sesame oil

50 g sugar

1 tbsp sesame seeds

30 g peanuts, chopped


Slice the mushrooms in quarter, lengthwise.


In a bowl mix the soy sauce, sugar, garlic, ginger, vinegar and half of the oil. Mix until well combined. Pour the sauce over the mushrooms and allow it to marinate for 10-15 minutes.


Heat the remaining oil in a pan and add, in batches, the marinated mushrooms. Cook on each side for about 2-3 minutes. Flip and continue for another 2-3 minutes.

Divide the rice among serving plates and serve with mushrooms, topped with sesame seeds, peanuts, chili and green onions.
