Spinach pancakes

When you are in the mood for some fancy brunch, indulge yourself with this recipe. These pancakes are soft, vibrant green, healthy and delicious 😊

 

100 g fresh spinach

100 ml milk

1 egg

2 tbsp oil

100 g all purpose flour

1 tsp baking powder

1 tsp salt

50 g crème fraiche

100 g smoked salmon

Fresh dill

Using a blender, mix spinach, milk, egg, oil and salt until very smooth. Add flour and baking powder and mix until just combined.

Heat a non stick pan on medium heat and pour 2 tbsp of batter for each pancake, then cook for 2 minutes. Flip and cook for 30-45 seconds more. Continue the same with the rest of the batter.

Top with crème fraiche, salmon, dill and serve.
