Meatless Monday is back 😊

Today’s recipe combines 2 “meaty” veggies with a spicy sauce and noodles. The result is delicious! ✨

1 eggplant, cut into 3 cm pieces

400 g oyster mushrooms, roughly chopped

100 g edamame

4 spring onions, chopped

1 packet soba noodles

50 g peanuts, chopped

1 tbsp sesame seeds

2 tbsp vegetable oil

Sauce

75 g Gochujang

80 ml soy sauce

6 garlic cloves, grated

3 cm piece of ginger, grated

4 tbsp rice vinegar

1 tbsp sesame oil

1 tbsp sugar

Preheat oven to 200 C. Prepare a baking tray and place eggplant and mushrooms on it. Drizzle the oil and toss to combine. Bake until golden brown (20 – 25 min).

In a bowl mix all the sauce ingredients until well combined and set aside.

Meanwhile, prepare soba noodles according to packet directions. Add edamame for the final minute of boiling. Drain very well.

Remove eggplant and mushrooms from oven and spoon over the sauce.

Divide soba noodles between plates, top with mushrooms, eggplant, spring onion, sesame seeds and peanuts. Drizzle the remaining sauce and serve.
