Spicy shrimp with creamy polenta

Today I felt I wanna eat something creamy and spicy and ready in 15 minutes ✨

100 g polenta, ready in 3 minutes type
400 ml milk
60 g butter
100 g ricotta
100 g Parmesan cheese, grated
400 g large shrimp, peeled and deveined
1 red onion, finely sliced
3 garlic cloves, minced
200 g cherry tomatoes, diced
1 tbsp extra virgin olive oil
2 tsp chili flakes
1 tbsp chopped parsley
Salt & pepper, to taste

Place the milk in a saucepan and bring to the boil. Add the polenta whisking constantly, until smooth and thickened.
Reduce heat to low and cook for 3 minutes. Add 30 gr butter, ricotta and Parmesan cheese and whisk to combine.

Heat the rest of the butter and olive oil in a pan. Add onion and cook for 5 minutes, then add the garlic and cook for 1 minute. Stir in the diced tomatoes and cook for 5 minutes.
Add shrimp and cook for 3-4 minutes or until the color is pink. Season and sprinkle with chili flakes and parsley.

Divide polenta between serving bowls and top with shrimp.
