(Spicy!) Easy shrimp curry

On a rainy day I wanna eat something spicy. Today is raining so my recipe for today is a silky, hot curry.

300 g shrimp
150 g red lentil
1 medium onion, chopped
4 garlic cloves, minced
1 tsp ginger, grated
2 tsp Thai red curry paste
400 g tomatoes, chopped
200 g frozen cauliflower, chopped
100 g frozen peas
1 tbsp vegetable oil
400 ml water
2 tsp chili flakes
1 bunch of coriander, chopped
Salt & pepper, to taste

Heat the oil in a pan and cook the onion for 4-5 min. Add the ginger and garlic and cook until fragrant, about 1 minute.

Stir in the curry paste and cook for 1 min more. Add the chopped tomatoes, the cauliflower, peas, lentils and 400 ml of water and bring to the boil. Simmer for 30 – 45 minutes or until the lentils are cooked through.

Add the shrimp and cook for 5 mins, depending on how large they are. Season to taste, add the chili flakes and sprinkle with coriander.
