A new “ready in 15 minutes” recipe ✨ If you love pasta and chorizo you will love this recipe.
150 g pasta
150 g chorizo, cut into chunks
300 g cherry tomatoes, diced
3 garlic cloves, minced
1 tsp chili flakes
200 ml cream
1 tbsp parmesan, grated
1 tbsp extra virgin olive oil
Fresh basil, chopped
Salt & pepper, to taste
Cook the pasta in boiling salted water according to the pack instructions. Drain well, reserving some of the cooking water (for desired sauce consistency)
Heat the oil in a pan over and cook the chorizo for 3-4 minutes or until it is crisp.
Add the garlic and the tomatoes and cook for 5 mins, then add the cream and allow to bubble for 3–4 minutes, stirring frequently until the cream has reduced by half.
Stir the pasta into the sauce with the grated Parmesan and chili flakes. Season to taste and sprinkle with basil.
