Meatless Monday is back 😊
Today, I’ve prepared a delicious meal with cauliflower and Gochujang sauce 🔥✨
500 g cauliflower
2 tbsp Gochujang
2 tsp soy sauce
1 tsp sesame oil
1 garlic clove, grated
250 g rice, cooked as per package instruction
200 g purple cabbage, finely chopped
2 spring onions, finely chopped
2 radishes, finely chopped
2 tbsp extra virgin olive oil
½ lemon, juice
Salt & pepper, to taste
Preheat oven to 190 C and prepare a baking tray. Arrange cauliflower on the tray and lightly drizzle with half of the oil. Cook in the oven for 30 minutes or until the cauliflower is cooked and crispy.
In a bowl mix Gochujang, soy sauce, garlic and sesame oil and set aside.
Once the cauliflower has cooked, brush with the sauce. Serve any remaining sauce alongside.
In a large bowl mix the veggies, season and drizzle with the remaining olive oil and lemon juice.
Divide the rice between serving bowls and add the cauliflower, cabbage, spring onions, radishes and sesame seeds.
