My today’s recipe is a healthy way to cook and enjoy potatoes.
And when you add an avocado salsa and chimichurri sauce, everything turns into a delicious meal ✨😊

Easy smashed potatoes with avocado salsa 🥑🥔

6 new potatoes
2 tbsp olive oil
3 cloves garlic, minced
Salt & pepper, to taste

Avocado salsa

1 ripe avocado, diced
3 cherry tomatoes,diced
1 red onion, finely diced
1 clove garlic, minced
1 tbsp extra virgin olive oil
1/2 lime or lemon, juice
2 tbsp chopped parsley and coriander leaves
Salt & pepper, to taste

Preheat the oven to 220 C.
Place potatoes in a pan, cover with water and bring to a boil on high heat. Continue boiling the potatoes for 15 – 20 minutes until tender, then drain.
Place potatoes onto the prepared baking sheet. Using a potato masher or a pan smash the potatoes until flattened. Season and drizzle with olive oil and garlic.
Bake for 20 minutes, or until golden brown and crisp.

For the avocado salsa, combine all the ingredients. Spread the salsa over the potatoes and serve with chimichurri sauce.
