I love every bite of this dish. Soft veggies, runny egg yolk, smoked and hot taste, a little bit of cheese – all in 1 bite ✨ Simple to make and mega delish!

Shakshuka

1 large onion, chopped
1 red bell pepper, chopped
4 cloves garlic, minced
1/2 red hot chilli pepper, chopped
150 gr cherry tomatoes, halved
2 tbsp tomato paste
2 eggs
2 tbsp olive oil
50 gr feta cheese
1 tsp cumin
2-3 tsp smoked paprika
1 small bunch fresh parsley, chopped
Salt & pepper, to taste

In a large pan, heat the olive oil and add the onions, bell pepper and cook for 5 minutes, until softened. Next add garlic, red hot chilli pepper and cook for 1 minute. Continue with the chopped tomatoes, paprika and cumin and cook for an additional minute, stirring constantly.
Add the tomato paste and 100 ml water. On medium heat, cook for 10 minutes. Season to taste.

Using the back of a spoon, make 2 dips in the sauce, then crack an egg into each one. Cover with a lid or foil and cook for 8-10 mins, or until the eggs are just set. Remove from the heat and top with feta cheese and parsley.
