Salad with turmeric chicken

Today’s recipe is about a simple and healthy way to enjoy 2 loved ingredients: chicken and potatoes ✨

 

2 boneless chicken breast

4 cloves garlic, chopped

1/2 lemon, juice

2 tsp turmeric

1 tbsp EVOO

Salt & pepper, to taste

Salad

200 g arugula or your favorite salad leaves

2 baked potato, quartered

1 cucumber, peeled

Corn shoots

Mustard dressing (1tbsp Dijon + 1 tbsp lemon juice + 2 tbsp EVOO + salt&pepper)

Combine chicken and rest of ingredients in a large bowl, cover and let marinate for at least 30 minutes.

Heat a grill (or non-stick pan) and cook chicken for 7-8 minutes per side.

Divide arugula between plates, add potato, cucumber and corn shoots, place the chicken over salad and drizzle with mustard dressing.

Enjoy!
