Today’s recipe is about baked veggies and kale. You can prepare this salad with any veggie you like.
1 small cauliflower, florets
300 g kale, chopped
200 g zucchini, chopped
½ chili, finely chopped
2 tsp sesame seeds
2 tbsp EVOO
Salt & pepper, to taste
Dressing
50 g tahini
1 garlic clove , grated
1 lemon, juice
1 tbsp EVOO
Preheat the oven to 200 C and prepare a baking pan with parchment paper.
Put the cauliflower and zucchini on the pan and toss them with half of the oil and salt and pepper. Bake for 15-20 minutes or until veggies are tender.
For the dressing mix well all the ingredients.
Heat the remaining oil in a pan and cook the kale for 3 mins.
Toss the kale with dressing, then add baked veggies, chili and sesame seeds and serve.
