Today I was in a mood for bakin’ so I’ve begun my week with roasted veggies. ✨
1 whole cauliflower, florets
1 tsp garlic powder
1 tsp turmeric
1 tsp cumin
1 tsp smoked paprika
1 tsp red pepper flakes
Microgreens
2 tbsp EVOO
Salt & pepper, to taste
Avocado sauce (dressing)
1 avocado
2 garlic cloves
½ lemon, juice
1 tbsp EVOO
50 ml water
Salt & pepper, to taste
Preheat the oven to 200C and prepare a baking pan with parchment paper.
Place the florets on the pan and toss them with spices and oil.
Season and bake for 30 minutes, flipping halfway.
In a bowl combine and blend all the avocado dressing’s ingredients. If the dressing is too thick, add a little more water.
Serve the cauliflower with avocado sauce and microgreens.
