Roasted beetroot with hummus and avocado

Today’s recipe is a super simple-to-prepare dish. With almost 0 effort you can eat a delicious meal.

 

2 medium beetroots

1 carrot, ribbons

1 avocado, slices

100 g hummus

50 g nuts, chopped

1 tbsp EVOO

½ lemon, juice

Salt & pepper, to taste

Preheat the oven to 220 C and prepare a baking tray with parchment paper. Place the beets on the tray and bake for 30 – 35 minutes or until tender.

Let it cool and slice it thinly.

Divide the hummus between plate, add the beets, avocado and carrot, top with nuts. Season and drizzle with oil and lemon juice.
