Meatless Monday is here 😊

Today’s recipe is, probably, the simplest and delicious soup. It has a very few ingredients and it is ready in no time. ✨
It can be done also with sweet potatoes.

5 purple potatoes, chopped

2 red onions, chopped

3 garlic cloves, chopped

500 ml water/vegetable stock

Fresh thyme

100 g vegan yogurt

Radish sprouts

2 tbsp EVOO

Salt & pepper, to taste

Heat the oil in a large pot and add the onion. Cook for 3-4 minutes, then add the garlic and sautee until fragrant. Add the potatoes, water, thyme and bring to boil. Simmer for 15 minutes or until the potatoes are tender.

Use a stick blender and blend until smooth. Season, divide between bowls, drizzle with vegan yogurt and sprinkle with radish sprouts.
