If you have leftover vodka from New year’s party and you are not in the mood for cooking, this recipe is the one 😊

Super creamy and delicious, these pasta are ready in no time.

 

200 g penne

1 onion, finely chopped

2 garlic cloves, finely chopped

30 g sundried tomatoes, finely chopped

2 tbsp tomato purée

2 tbsp vodka

200 ml (whipping) cream

30 g butter

1 tbsp EVOO

Parmesan, grated

1 tsp chili flakes

Salt & pepper, to taste

Fresh basil

Cook the pasta in salted water according to your package instructions and reserve 100 ml cooking water.

Heat the oil and butter in a pan and cook the onion until softened; add garlic and sundried tomatoes and cook until fragrant, about 1 minute.

Add the vodka and simmer for a minute, then add tomato puree and cream.
Simmer until the sauce has thickened, about 5 minutes. Season, add the drained pasta and reserved water, if the case. Mix well and serve with a sprinkle of chili flakes, basil and parmesan.
