Today’s recipe combine 2 delicious treats: a cupcake and Oreos.
200 g all purpose flour
200 g sugar
30 g cocoa powder
1 tsp baking powder
½ tsp baking soda
1/4 tsp salt
180 ml buttermilk
2 eggs
80 ml coconut oil
60 ml coffee
Frosting
250 g butter, room temperature
500 g confectioners’ sugar
100 g white chocolate, melted
50 ml milk, added as needed
100 g crushed oreos
Preheat the oven to 180 C and prepare a muffin pan.
In a large bowl, sift the flour, sugar, salt, cocoa powder, baking soda and baking powder.
In another bowl mix the eggs, oil, buttermilk and coffee. Pour this mixture over flour and mix until just combined.
Divide the batter between muffin papers and bake for about 15-20 minutes or until a toothpick inserted in the center comes out clean.
Frosting
Beat the butter until light and fluffy, then add the sugar and chocolate and mix until well incorporated.
Crush the Oreos, add to the buttercream and mix until combined.
Put the buttercream in a piping bag fitted with a tip of your choice and decorate the cupcakes as you like.
