Today’s recipe is a refreshing, fruity dessert, no baking required. ✨
Crust
250 g lady fingers
80 g butter, melted
Cheesecake
250 g cream cheese
250 g mascarpone
100 g sugar
10 g gelatine powder
1 tsp vanilla bean, seeds
6 peaches, sliced, to decorate
Peach syrup
2 peaches
Sugar syrup (100 g sugar + 100 g water)
Prepare a springform cake.
Crush the lady fingers in the food processor, add melted butter and mix until well combined.
Press the mixture into the bottom of your pan and refrigerate at least 30 minutes to firm.
Beat together cream cheese, mascarpone, vanilla seeds and sugar until well mixed. Add hydrated gelatine and mix.
Spread the mixture into the pan and refrigerate for at least 2 hours or until firm.
In a bowl, puree 2 peaches, add syrup and set aside for 1-2 hours.
Place in a sieve over a bowl to strain and set aside.
Remove the cheesecake from the springform pan and use the peaches to decorate, then drizzle with the syrup.
