Today’s recipe is one of the easiest way to enjoy a vegan variant of this goodie, loved by everyone.

 

500 g mushrooms, chopped

2 garlic cloves, chopped

1 tsp cumin

1 tsp sumac

1 tsp smoked paprika

2 tbsp EVOO

Salt & pepper, to taste

2 flatbreads

50 g hummus

1 red onion, sliced

100 g cherry tomatoes, chopped

4 tbsp tahini sauce (tahini + garlic + lemon juice + water)

Salad/lettuce/parsley

Heat the oil in a pan and cook the garlic and mushrooms for 5-7 minutes or until golden, then add cumin, sumac and smoked paprika and cook for 1 minute more. Season and set aside.

Warm the flatbreads, spread with hummus, add the lettuce, mushrooms and veggies, drizzle with tahini sauce and serve.
