Today’s recipe is about roasted veggies, cheese and crunchy pastry. Put together in a beautiful, rose shape. Absolutely lovely and delicious! 😊

1 fresh puff pastry

1 large carrot, cut in ribbons

2 medium zucchini, cut in ribbons

50 g mascarpone

50 g feta, crumbled

20 ml milk

Salt & pepper, to taste

Preheat the oven to 200°C and prepare a muffin pan.

In a bowl mix the mascarpone with feta cheese until well combined.

Cut the dough in 6 strips. Brush each strip with milk.

Place the veggies on the dough, lengthways, over one-half of the pastry. Add some cheese and season.

Fold up the bottom part of the dough, then roll, seal the edge and place in a muffin cup.

Do the same with the rest of the strips/veggies.

Bake for 25-30 mins or until pastry is golden brown and cooked through.
