Goodies time is here 🙂 I love to bake so today I baked a mini wonderful and delicious cake.

Ingredients
150 g all-purpose flour
200 g sugar
100 ml vegetable oil
2 eggs
120 ml buttermilk
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract

Cheese frosting
250 g mascarpone
100 ml whipping cream
250 g icing sugar

Topping
Fresh forest fruits

Preheat the oven to 180 C. Prepare 2 small round cake pans with parchment paper.

Whisk the oil, eggs, sugar and vanilla in a large bowl until blended.
In a separate bowl mix together flour, baking powder, baking soda and salt with a whisk.

Pour the sugar, oil, and egg mix into the dry ingredients and whisk until combined. The batter will be thick.
Add the buttermilk and mix until just combined.

Divide this between the 2 pans and bake the cakes for 30 to 35 minutes, until a skewer inserted in the centre of the cake comes out clean. Cool completely the cakes

Cheese frosting
Beat the cream cheese and whipping cream until smooth. Add half of the icing sugar and beat until smooth. Beat the remaining icing sugar until light and fluffy.

Using a very sharp knife halve each cake lengthwise.
Place one layer onto a plate and spread the top with a generous layer of frosting and top with the second layer. Continue the same with the other 2 layers. Spread remaining frosting all over the top and sides. Decorate the sides and top of the cake with blueberries and raspberries.
