It is goodies time 😊
This is an intimidating recipe but it’s actually very easy to make. These beauties are very fluffy, delicious and fresh ✨

Mini Pavlovas

4 egg whites
200g caster sugar
2 tsp white wine vinegar
2 tsp cornstarch

Topping
200 ml cold whipping cream
2 tbsp sugar
100 gr blueberries
100 gr strawberries
100 gr redcurrant
Fresh mint leaves

Pre – heat the oven to 150 C (the lowest temperature of my oven).
Whisk egg whites with a mixer until they form stiff peaks, then whisk in the sugar, 1 tbsp at a time, until the meringue looks glossy.
Add the white wine vinegar and cornstarch and mix well.

Gently spoon or pipe meringue into circle shape, on the lined pan.
Bake for 1 hr, then turn off the heat and let the Pavlova cool completely inside the oven.

Whisk the whipping cream and sugar at high speed until peaks form, about 3-4 minutes.Spread it over the meringue and add fresh fruits and mint.
