Mezze – Moutabal and Fattoush

Meatless Monday is here 😊

Today we wanna try different tastes and textures so I’ve prepared a mezze meal. The newest recipes are moutabal and fattoush salad ✨

Moutabal

2 eggplants

1 tbsp tahini

½ lemon, juice

2 garlic cloves, grated

1 tsp extra virgin olive oil

1 tsp sumac

Salt & pepper to taste

Fattoush

2 medium tomatoes, cubed

2 medium cucumbers, sliced

1 red onion, sliced

1 handful parsley, finely chopped

½ bunch of mint, finely chopped

2 pieces Lebanese flatbread, cut into small pieces, fried (cook in oil for 1 to 2 minutes or until crisp and golden)

Dressing

2 tbsp extra virgin olive oil

1 lemon, juice

2 tsp sumac

Salt & pepper, to taste

Fattoush

In a bowl mix the oil, lemon juice, sumac and salt & pepper.

Place tomatoes, cucumbers, onions, parsley and mint in a large bowl. Sprinkle with sumac, then drizzle with dressing and toss to combine.

Moutabal

Roast the eggplants directly on a gas stove until the skin turns black and the flesh is softened.

Allow it to cool, then peel the skin off.

In a food processor puree the eggplant, then add tahini, lemon juice, garlic, salt & pepper and mix well.

Garnish with extra virgin olive oil and sprinkle the sumac.
