Meringues with blueberry sauce

4 egg whites, room temperature
200 g granulated sugar
1 tbsp cornstarch
1 tbsp white vinegar
150 g forest fruits jam

Blueberry sauce
250 g blueberries
50 g sugar
1/2 lemon, juice
50 ml water

Preheat the oven to 150 C.
Beat egg whites on high speed with an electric mixer, until foamy. Reduce speed to medium and gradually add sugar, 1 tablespoon at a time, beating until mixture is glossy and sugar dissolves.
Add cornstarch and vinegar and mix until blended.

Line a baking sheet with parchment. Microwave jam for about 30 seconds. Pour through a fine strainer into a bowl and keep the liquid.

Drizzle liquid onto meringue and lightly mix. Using a posh form the swirled meringue in the prepared baking sheet.

Bake for 75 – 90 minutes until outsides have formed a crust. Turn off the oven and let meringues stand in the oven, with the door closed, at least 2 hours.

In a pan stir together fresh blueberries, sugar, water and lemon juice. Bring to a boil and cook for 2 to 3 minutes. Remove from heat and cool completely.
Fill meringues with blueberry sauce and serve topped with strawberries and blueberries.
