Today’s recipe is a loaf cake, loved by anyone and very simple to make.
Lemon loaf cake
200 g all purpose flour
115 g butter, room temperature
3 eggs
100 ml buttermilk
200 g sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 large lemon, zest and juice
Icing
1 cup powdered sugar
1 tbsp lemon juice
1 tbsp milk
Preheat the oven to 180 C.
Beat together the butter and sugar until creamy, then add the eggs, one at a time. Add the lemon zest and juice.
In a bowl whisk together the flour, baking powder, baking soda & salt.
Mix in about 1/2 of the flour mixture followed by about 1/2 of the buttermilk.
Repeat the process with the rest of the flour and buttermilk.
Pour the batter into the prepared pan and bake until an inserted toothpick comes out clean and the top feels firm to the touch, about 50 minutes.
Let cool completely, about 1 hour.
Meanwhile, prepare the icing – in a bowl mix slowly all the ingredients.
Pour icing over cake and let dry before serving.
