Directions
4 eggs, lightly beaten
100 g goat cheese
75 g spinach, chopped
1 small red onion, finely sliced
1 handful arugula
2 tbsp extra virgin olive oil
Salt & pepper, to taste
In a bowl mix eggs, goats cheese, spinach and season with salt and pepper.
Heat the oil in a nonstick pan and add the egg mixture and cook until set.
Top with arugula and onion and serve.
