Meatless Monday is here 😊

I had some kale in my fridge and I wanted to eat it differently, so today’s recipe is a delicious soup.

Super easy to make, you can prepare this soup with almost every salad leaves you have.

 

1 onion, chopped

4 spring onions, chopped

2 garlic cloves, chopped

1 carrot, chopped

250 g kale, chopped

1 bunch parsley, chopped

600 ml vegetable stock

2 tbsp EVOO

Salt & pepper, to taste

Radish sprouts

Heat the oil in a pan and add the onion and carrot and cook for 4-5 minutes. Add garlic and spring onions and cook until fragrant.

Add the stock (or water) and simmer for 15-20 minutes. Add chopped kale and cook for 3-5 minutes more. Season, sprinkle with parsley, radish and serve.

Enjoy!
