Inspired by the pesto made earlier, I’ve prepared another super easy and delicious meal ✨

Homemade gnocchi with basil pesto

4 medium potatoes (cca 500 gr)
75 g all purpose flour
Salt & pepper, to taste

Peel the potatoes, chop into small chunks and cook in a pan of boiling salted water until tender.

Drain the potatoes and mash well. Taste and season with salt and pepper.

Sprinkle over the flour and push the mixture together with clean hands.
Work the flour into the potato until it becomes a soft, pliable dough.

Divide into 2 or 3 equal pieces and roll each into a rope about 2 -3 cm thick. Cut them into small pieces then drop into the boiling water for 1 minute, or until they float.

Drain and mix them with the pesto sauce.

Enjoy!
