I love to start the week with a healthy meal. My today’s recipe it’s a healthie, green goodie, easy to make and very versatile✨

Healthy Sandwich

4 slices of bread
2 avocados
1 cucumber, sliced
40 gr goat cheese
Cream cheese, to spread
Micro greens
1/2 lemon, juice
1 clove garlic
1 tbsp olive oil
Salt & pepper, to taste

Avocado cream
Place 1 avocado, garlic, lemon juice and oil in a blender; season with salt and pepper and purée until smooth.

Spread cream cheese over all 4 slices of bread. Continue with avocado cream. Arrange microgreens over and top with slices of avocado, cucumber and goat cheese. Close sandwiches.

Enjoy!
