Today’s recipe is about deeeelicious baked, cheesy potatoes (that kind you could eat every day 😊)
4 sweet potatoes, washed
100 g butter, room temperature
4 garlic cloves, grated
1 bunch of parsley, finely chopped
70 g Parmesan, grated
Salt & pepper, to taste
Preheat the oven to 200 C and prepare a baking pan with parchment paper.
Place potatoes between 2 wooden sticks and cut into thin slices.
In a bowl mix the garlic, butter and parsley until well combined. Brush the potatoes with half of the butter.
Bake for 40 – 50 minutes or until potatoes are tender and browned.
Remove from the oven and brush with the remaining butter, season, add the parmesan cheese and bake for another 5 minutes.
