Halloumi burger

There are days when I wanna eat something good, comfort foodlike, but a little bit different, if it is possible 😊
And for these kind of days I make these kind of combinations, that fully satisfy me.

 

250 g halloumi cheese, sliced lengthwise
1 tomato, sliced
1 red onion, sliced
1 cucumber, peeled
Salad leaves & Microgreens
100 g avocado cream (1 avocado + 50 g mascarpone + 1 tsp lemon juice + 1 garlic cloves, grated + salt & pepper)
2 burger buns, halved
1 tsp EVOO
Salt & pepper, to taste

In a small bowl, using a hand blender, mix all the avocado cream ingredients and set aside.

Heat a grill pan on medium heat. Brush the halloumi slices with oil and cook on each side for 1-2 minutes or until beautiful golden brown grill marks.
*grill the buns too for 2 minutes

Spread the avocado cream generously on each half of the buns. Add salad leaves, tomatoes, halloumi, onion, cucumbers and microgreens and top with the other half of the bun.
