Today I felt inspired to play with my veggies, this is my result 😊

An easy recipe, it can be done whenever you want a light and healthy meal.

2 eggs

70 g quinoa, cooked as per pack instructions

250 g broccoli

100 g peas

100 g edamame

150 g salad/spinach leaves

2 spring onions, finely chopped

½ cucumber, finely chopped

Radish sprouts

Avocado dressing

2 avocado

1 garlic clove

1/2 lemon, juice

3 tsp EVOO

30 ml water

Salt & pepper, to taste

Place the eggs in a pan and cover with cold water. Bring to boil and simmer for 3-4 minutes.

Put them under cold running water, then peel and cut in half.

Bring a pan of salted water to boil. Add broccoli, peas and edamame and cook for 2-3 minutes. Put them under cold running water, then set aside.

Avocado dressing – combine and blend all the ingredients.

Divide the quinoa and salad leaves between plates, add all the veggies and eggs and drizzle with avocado dressing
