Goat cheese and fig tartlets

Today’s recipe is about a delicious combo: cheese and fruit, autumn style 😉

Puff pastry, cut in circles

100 g goat cheese

100 g sour cream

1 egg, lightly beaten

2 fig, quartered

1 egg yolk, for brushing

Salt & pepper, to taste

Microgreens or your fav salad leaves

1 tbsp EVOO

1 tbsp balsamic vinegar

Salt & pepper, to taste

Preheat the oven to 180 C and prepare 2 pastry rings (or a muffin tray).

Gently fit the pastry circles into the pastry rings or muffin tray.

In a bowl, mix the goat cheese, egg and sour cream and season.

Fill each tartlet with goat cheese mixture, brush them with egg yolk and bake for 20-25 minutes or until the pastry is golden brown.

Prepare the dressing and salad and divide between plates. Add the tartlet, topped with fig.

Enjoy!
