I know Christmas is close when I start baking Christmas cookies 🎄⛄✨

Today’s recipe is a super easy one, just perfect to be made with kids or friends.

 

400 g all-purpose flour

150 g dark brown sugar

150 g honey

150 g butter, room temperature

1 egg, room temperature

1 tsp baking soda

1 tsp vanilla

2 tsp cinnamon

1 tsp ginger

1 tsp allspice

1/2 tsp cloves

Decoration

Royal icing (90 g egg whites + 450 g confectioners sugar, beaten until stiff peaks)

Sprinkles

In a stand mixer beat butter, sugar, honey until fluffy, then add the egg and vanilla and mix until combined.

On slow speed, add the flour, baking soda and spices and mix just until combined.

Wrap the dough in plastic and chill it for minimum 2 hours.

Preheat the oven to 180 C and prepare 2 baking trays with parchment paper.

On a lightly floured surface and roll the dough until ½ cm thick.

Cut it into shapes and transfer to baking trays.

Bake cookies for 6 – 8 minutes or until crisp around the edges

Let cool completely, then decorate with icing and sprinkles as desired.
